Carotenoids are another main class of antioxidants. These compounds are natural pigments which are synthesized by plants, and are responsible for the colors of various fruits and vegetables. Their antioxidant activity helps the immune system neutralize free radicals and reduce oxidative stress, which consequently promotes body health.
Here are four major carotenoids. Orange and yellow vegetables like carrots, pumpkin and sweet potato are rich sources of beta carotene. Lycopene is found in red and pink fruits and vegetables, such as tomato, watermelon and pink grapefruit. Green leafy vegetables like spinach, parsley and broccoli, together with orange pepper and egg yolk, contain high amounts of lutein and zeaxanthin.
